Using a carrot is acceptable, the drop doesn’t need to be all that big either.

Iron golems each give 3-5 ingots, and the classic iron farm design (DocM’s?) will spawn one iron golem every 6 minutes, on average. So with a single-village iron farm, you can expect 30 to 50 ingots an hour. You don’t have to be too close for the golem to spawn; if the chunk is loaded, it should be working.

However, if you’re off adventuring, you won’t be producing iron. Also, populating the village with villagers can be a bit tricky, especially working alone. So it’s probably not worth the effort and resources.

I’m the first one to not have any objections to an iron farm, but with the small amount of time you spend at your base, you might not get much out of it. And it does kinda seem not in the spirit of what you are trying to do with this series. If you aren’t allowing yourself to *branch* mine, then the golem farm seems out of bounds.

Are there spawn chunks in single player? If there are that would solve the output issue for an iron farm in this setting.
